I’m thrilled to say that today marks Adam and I’s 2nd wedding anniversary.  I thought it would be fun to reminisce a bit through my blog, as Adam is never very on board for all that mushy stuff.  :)

Here are some questions and answers that I thought would be fun to answer and then to have to compare to in years to come.

Number of years married: 2

Number of years together: almost 4

Ages: I’m a week short of 29 and he is 32.

Where we live: Our house in Nixa that fits us perfectly for the time being.

Number of kids: ONE!  Our almost 3-month old Avery Grace.

Where do I work? About to start my 7th year teaching at Central.  And I finished off my fifth and final (for now) year of coaching tennis by sending a doubles team to State.

Where does Adam work? He is about to start his 11th year of teaching, and his 5th at Ozark.  (I think I got that right.)  Plus he is starting his second year of coaching junior high football, which he really enjoyed last season.

What awesome things have happened within the last year? We went on vacation to Weston/Miami Florida last summer and to Memphis on a Babymoon over our Spring Break. We also got pregnant with our first baby, then in May welcomed her into the world.  So, pretty much the most awesome thing possible happened.  :)

What do we enjoy doing as a couple? We are very much home-bodies when we aren’t on vacation.  So just being home together is on the top of our list…especially when we are in the midst of all the busyiness that comes with school and coaching.  And now of course, the time it takes to take care of a newborn.  We also love working in the yard together, watching sports (what ever is in season), and eating out.

In our marriage we are really good at… supporting each other.  Adam  is the calm one, who can always bring my high-strung self back together when I’m panicked or worried about something.  I do my best to take care of him in any way that he lets me, even if it’s little things like laundry and cooking dinner with no carbs!

We’re dreaming of… always our next vacation, hopefully to the beach next summer with Avery.  A day when no baby cries ALL day long.  And of course our retirement.

We’re busy with… school very soon, and for a few more weeks entertaining our newborn.

We want to… finish more master’s classes this year.  I’m hoping to completely finish.  And to continue to save money for our retirement and future trips.

I like to… read, spend time on the treadmill, watch bad TV.  I’m currently hooked on watching past seasons of The Vampire Diaries. (Thanks Mari and Katie.), and of course try to get my precious baby to smile.

Adam likes to… hunt, play golf, work in the yard, play X-box on occasion, and keep up with the sports world.  He is also a master of Words with Friends.  I don’t think I will ever beat him at that one.

What does a typical day look like? We are still working on what’s typical now that Avery has arrived.  Not to mention it will all change very soon when we both head off to work.

Anniversary Plans: We have spent the day at home…nothing exciting, but at least we are together.  Probably dinner out somewhere yummy tomorrow night.

I love you Adam.  Happy Anniversary!  I can’t wait for all the years we have to come.  -Lindsey

Having just gotten back from a mini-vacation/Spring Break trip/Babymoon to Memphis I can’t help but feel a bit obligated to write a post about it, especially since it was a pretty laid-back trip, but so much fun.

I have very few pictures to share, as Adam and I are neither one huge picture takers.  I always feel like if you see something interesting, you need to have someone in the picture, otherwise it could be straight from a postcard or a website…thus anyone could have taken it.  At the same time, when you’re in the moment, and enjoying what you’re seeing, it sometimes feels like it’s taking something away from that if you stop to take a picture–it feels forced.  And then there are those people who go on vacation that you see taking pictures of literally EVERYthing, and I always question what they are going to do with those later.  I mean really, who is going to want to look at the hundreds of pictures you took when you get back?  And are you yourself even going to want to look through all of them again at some point?  I’m not so sure.

First up, let’s talk food…because for us, that’s always one of the top reasons to even go on vacation!

Restaurants:

B.B. King’s — This was our first stop when we got to Memphis.  (Picture above.)  We were really hungry, it was pouring rain on us as we were determined to walk since we had just been sitting in the car half the day, it was on the famous Beale Street, and was recommended to us as a must-visit place in Memphis.  They had a live band playing, fun atmosphere, food was decent, but nothing spectacular.  Yummiest Item: Adam’s dry ribs.

Wet Willie’s — This was a snack/lunch stop…mainly for the frozen drinks.  We had a huge plate of loaded nacho’s.  Pretty good, but how can you go wrong with something covered in cheese?

Bluff City Coffee — We stopped in here for a break from the cold and to rest my legs.  Plus, I was having some major chocolate cravings.  We got some yummy coffee and I got a deliciously warm brownie.  Perfect.

Flying Fish — Adam found and chose this one for dinner.  It was awesome!  But you can never go wrong with seafood in my book.  I got a pound of boiled shrimp, while Adam got fried shrimp and oysters, and a big batch of hush-puppies.  Everything was good.  This is apparently a chain, which we were disappointed to find out…but the food and atmosphere were good enough we didn’t care.  I’d say we will look for one of these in the future at other vacation spots!

The Flying Saucer — Again another chain…but nonetheless it was a really cool bar.  They had over 200 craft beers that you could try.  Laid-back, fun place to go.  Will be even more fun the next time without a bun in the oven.  ;)

Downtown BBQ — Finally to top off our true Memphis eating experience we went to this place that has been featured on countless Food Network TV shows for having the best barbecue.  And for sure it did NOT disappoint.  Adam and I both felt that this place might have had the very best BBQ sauce we had EVER eaten, EVER.  :)  I got the pulled pork sandwich and Adam got the pork plus the ribs.  Delicious!  It was all good.  No complaints.  This is a must-eat for anyone who visits Memphis!

Sight-Seeing:

We discovered really quickly that Memphis is THE place to go if you love Elvis, rock and soul music history, or civil rights history.  We are not all that interested in any of those things.  Haha.  But we still kept ourselves thoroughly entertained with other historic sites we saw and just the fun of exploring a new city.

Things we did/saw:  The old trolley’s were really neat and we rode them all the way around downtown.  Beale Street during the day and night.  The Peabody ducks and the legendary Peabody hotel.  The Lorraine Hotel where MLK Jr. was shot.  Victorian Village.  Saw where the Memphis Grizzlies and Cardinal’s Triple A team play.  A. Schwab old-time store/museum – it was one of our favorites and totally free.  Steamboats.  The Pyramid which is in the process of being turned into a Bass Pro…will be back to see that some day.  Harbor Town.  National Ornamental Metal Museum – only slightly interesting.

The walk along the bluffs and RiverWalk along the Mississippi River – This was probably our favorite!  See the pictures below…not to mention my super-cute husband!  He was also sweet enough to be patient with my 30-week pregnant self any time I needed to stop and sit for a few minutes.  I adore this man.  Sorry for the mushiness.  :)

A year and half later… October 28, 2012

Yes, I did it again. I am quite possibly the worst blogger ever. I wrote three times consecutively…and now it’s been over a year and a half with no posts whatsoever. However, I now have a reason that might keep me a little more on top of things. And that would be the upcoming arrival of the newest member of the Erickson family!!

Adam and I are extremely thrilled to welcome a new baby to our house on or around May 21st, 2013! I have several family members and possibly a few friends who will be dying to see pictures of me and my growing belly (particularly my Nannie), so I think this will be the best way to give those people what they want, since I won’t get to see most of them on a weekly basis. Pictures coming very soon!

44 Days To Go! June 6, 2011

I am 44 days away from being a married woman again. This time to the most wonderful man I know besides my father. I say this with complete honesty. He is the total package in every way possible.

Adam is in many areas more intelligent than myself. I love how smart he is!
He is absolutely gorgeous with beautiful brown eyes, dark hair, tall, and tan.
He is an extremely hard worker, a great teacher, a wonderful coach, and amazing son.
He is responsible, thoughtful, caring, hilarious, ambitious, cute, sweet, and the man of my dreams!

I am very happy that this time around our wedding is all about us. We want our parents there to help celebrate the special day with us, but beyond that, it’s all about this journey we plan to continue together. He has become my whole life, and I can’t imagine it without him. I soo look forward to dedicating myself to him and the life that we will continue to build with one another. As we catch ourselves already calling/thinking of one another as each others spouse’s, this will make it official…especially to all the superficial people out there, who wouldn’t see it for what it is without that title.

I look forward to changing my name for the last and final time. I look forward to starting a family with this man, VERY soon. I look forward to growing in our relationship, and to growing old with him. Adam you are my one and only, and I love you so very much! 44 days baby. :)
